Another of Abbie’s amazingly chewy chocolate chip cookies. This chewy chocolate chip cookie uses margerine and half a package of chocolate chips.
Abbie suggested making two batches this time so she had enough to take some chewy chocolate chip cookies to her teacher after her brothers horded all the cookies last time.
Preheat Oven to 325 degrees F (165 degrees C)
3/4 cup margerine softened -> cream at HIGH speed
add:
1 egg
1 egg yolk -> beat together
add :
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
-> cream at HIGH speed (may be a tiny tiny bit lumpy )
In a big bowl mix:
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon
1/2 package of chocolate chips
Add dry mixture 1/2 cup at a time while mixing.
Bake 7-12 min (varies by oven) until top is lightly golden.
Cool on baking sheets then transfer to wire racks to cool completely.

Mix:
2 eggs
3/4 cup sugar
3/4 cup packed brown sugar
2 teaspoons Vanilla
1 cup Golden Crisco
In another bowl mix:
2 1/3 cups unsifted of flour
1 tsp salt
1tsp baking soda
1/2 package of chocolate chips
Slowly add dry mixture to wet while blending. Drop in spoonfulls onto cookie sheet.
Bake for 7-8 minutes at 350 degrees

A busy mom doesn’t always have chocolate chips in her family’s kitchen cupboard. So this evening we made some busy mom Peanut Butter Oatmeal cookies.
They turned out great – though I had to turn the temp down a little and we cooked them for 9 minutes.
1 1/2 c. flour
3/4 c. soft butter
1/4 c. peanut butter
2 eggs
3 c. oatmeal
1/2 tsp. baking soda
1 c. sugar
1 c. packed brown sugar
1 tsp. vanilla
Mix all ingredients together. Drop by spoon onto lightly greased cookie sheet. Bake at 350 degrees for 10 minutes. Makes 2 dozen
Pumpkin Cookies
Ingredients:
1 1/2 Cups Butterscotch Chips 1 Teaspoon Seasoning – Cinnamon
1 Teaspoon Baking Powder 1 Teaspoon Baking Soda
1/4 Teaspoon Seasoning – Salt 2 Cups Flour – All Purpose
1 Teaspoon Vanilla Extract 1 Cup Pumpkin Puree
1 Cup Sugar – White 1/2 Cup Shortening
Cooking Directions:
1. Preheat oven to 350 degrees F.
2. Cream the shortening and sugar and then stir in the pumpkin and vanilla.
In a seperate bowl sift the flour, salt, baking soda, baking powder, and cinnamon; stir into the
creamed mixture.
Add the chips.
Drop a teaspoon at a time on pregreased cookie sheets.
3. Bake for 8 to 10 minutes in preheated oven.
Allow cookies to cool for 1-2 minutes before moving to cooling rack.
